Oil-Free Banana Bread
2 cups oat flour
1 1/2 tsp baking powder
1/2 tsp baking soda
3-4 very ripe bananas, mashed (see notes)
1/4 cup date paste (see recipe below; see notes)
1 tsp vanilla extract
1/2 tsp cinnamon
1/2 cup chocolate chips (optional)
Preheat oven to 350 degrees Fahrenheit.
In a medium bowl, mix oat flour, baking powder, and baking soda. Set aside. In a large bowl, mix mashed bananas, date paste, vanilla extract, and cinnamon until well combined. Slowly add dry ingredients to wet and mix. If using, stir in chocolate chips.
Pour batter into a loaf pan lined with parchment paper and bake for 35 minutes, or until a toothpick comes out clean.
- If your bananas are large, you only need three. If they're on the small to medium side, we recommend using four. A little extra banana won't hurt here!
- We recommend using very spotty, ripe bananas, but if you're in a pinch (pinch = dying for banana bread but lacking in ripe bananas) you can use only somewhat ripe bananas and up the date paste to 1/3 cup.
Date Paste (Vegan + Gluten Free)
1 lb medjool dates, pitted
2 cups water
Add pitted dates and water to a high speed blender and blend until smooth and creamy. Store in a sealed container in the refrigerator.
