cookie dough bites
1/2 cup gluten free rolled oats
1/2 cup gluten free oat flour
1/2 tsp cinnamon
pinch of salt
1 tbsp coconut oil, melted
2 tbsp natural peanut butter
2 tbsp maple syrup
1/4 tsp vanilla extract
1/3 cup chocolate chips
In a medium bowl, stir together all dry ingredients except the chocolate chips. In a separate, smaller bowl, combine coconut oil, peanut butter, maple syrup and vanilla, working quickly if you're using cold ingredients so that the coconut oil doesn't harden. Incorporate the wet ingredients into the dry, stirring until it comes together to form a dough. We find it helpful to use our hands. Stir in chocolate chips.
Roll dough into 10-12 balls, each about the size of a ping pong ball. These can be eaten as is, or they can be refrigerated for 1-2 hours for firmer bites. Any leftovers should be stored in the fridge.
- As we mentioned, these bites are highly customizable. Have fun with them! You can replace the chocolate chips for equal amounts dried fruit, seeds, nuts, etc. Just keep the total amount of add-ins to about 1/2 cup.
- Honey can be used in place of maple syrup.
