As you know, we're craving everything pumpkin these days. While making a batch of the cookies mentioned above, we had the idea to create an equally simple pumpkin cookie. Boom.
Pumpkin Chocolate Oat Cookies
1 cup gluten free oats
1/2 cup pumpkin puree (not pumpkin pie filling)
1/2 cup unsweetened applesauce
1/2 cup chocolate chips
1 1/2 tsp pumpkin pie spice
Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper, and set aside.
Mix all ingredients together. Form balls of dough about 2 tbsp in size and place on lined baking sheet, pressing each ball down slightly with your hand. The cookies will not spread, so place them just far enough apart from each other that they are not touching.
Bake 15-20 minutes until the tops of the cookies are firm. These are best straight out of the oven.
