And - this is not a drill - they're HEALTHY. I promise.
Plus they only require 6-8 ingredients (depending on if you choose to make them raw and/or added sugar free) - and this includes the sea salt to sprinkle on top. You let your food processor or blender do all the work too.
Grapefruit Dark Chocolate Tarts
1 medium avocado (mine was 230 grams)
1/2 cup grapefruit juice (from one medium grapefruit)
1/4 cup + 2 tbsp unsweetened cocoa powder (see notes)
2 tbsp + 2 tsp maple syrup (see notes)
1 tbsp coconut oil
1 cup raw unsalted almonds
1 cup medjool dates, soaked in warm water for 5-10 minutes, drained and pitted (I used 12 dates)
Sea salt, optional
Pulse almonds in a food processor or high speed blender until broken up into small pieces, stopping before they become almond meal. Add soaked and pitted dates and blend until the ingredients come together in a sticky ball. Press half the mixture into each tart dish.
Place all filling ingredients in food processor or blender and blend until smooth. Taste and add more sweetener if desired. Pour half of the filling into each tart dish and smooth out the top. Sprinkle with sea salt if desired.
Cover and chill in the fridge at least one hour.
- Add more maple syrup to make the filling sweeter.
- To make this raw and/or have no added sugar, replace the cocoa powder with cacao powder, and the maple syrup with 2-3 pitted medjool dates (to taste).
- If your tart dish doesn't have a removable bottom, I find that a fork helps to remove the tart more easily than a pie spatula.
- Make sure your avocado is ripe; the less ripe it is, the harder it will be to mask the avocado flavor.
