To curb this intense desire for cookies without going too overboard, we've made it our mission to develop some lighter, healthier cookie recipes. And so, we give you these no bake crispy chocolate cookies!
No Bake Crispy Chocolate Cookies
2 cups crispy rice cereal (we used this brown rice version from Whole Foods, but use a gluten free version if needed)
1 cup gluten free rolled oats
1/2 cup unsweetened cocoa powder
1/2 cup shredded unsweetened coconut
Pinch of salt
1/4 cup unsweetened almond milk
1/4 cup unsalted peanut butter
1/4 cup maple syrup
1 tbsp coconut oil, melted
In a large bowl, mix rice cereal, oats, cocoa powder, coconut, and salt until well combined. In a separate bowl, stir together almond milk, peanut butter, maple syrup, and coconut oil. Pour the wet ingredients into the dry and combine to form a sticky "dough."
Using your hands, a cookie scoop, or an ice cream scoop, mold the dough into mounds. Place the cookies in a container and freeze for at least an hour. Enjoy cold!
