coconut french toast
8-10 slices of bread (see notes)
1 can light coconut milk (see notes)
1 cup unsweetened almond milk
1 tsp cinnamon
1 1/2 tbsp flax meal
1 tsp coconut oil, for frying
Heat coconut oil in a skillet over medium heat.
While the skillet heats up, whisk together coconut milk, almond milk, flax meal and cinnamon in a medium bowl. Soak each slice of bread in this mixture, leaving each side of the bread soaking for about 20 seconds. The bread shouldn't be soggy, but each side should be coated thoroughly.
Add your soaked bread to the pan, making sure not to crowd it. Flip the bread once the underside turns golden brown, about 4-6 minutes. Continue to cook until the second side crisps up and the bread is heated through. Repeat this process until all of the french toast is ready.
Top with fresh fruit, coconut flakes and real maple syrup. Might we suggest adding a dollop of our cinnamon frosting? It will change your life.
- Any type of thickly sliced bread can be used; we used a chewy rustic Italian loaf. Sub gluten free bread if needed.
- We used Trader Joe's Light Coconut Milk. If you don't like coconut milk, or don't have any on hand, sub equal parts additional almond milk.
- Keep French toast warm by placing it in the oven set to 200 degrees Fahrenheit until all the slices are ready.
