The chocolate chips are optional, but are they really?
single serving banana bread
2 tbsp gluten free oat flour
1 tbsp almond meal
1/4 tsp baking powder (optional, see notes)
1/4 tsp cinnamon
pinch of salt
3 tbsp banana, mashed (about 1/2 a medium banana)
1 tbsp chocolate chips (optional)
1 tsp maple syrup (optional, see notes)
small splash vanilla extract
Preheat oven to 350 degrees Fahrenheit.
In a small bowl, stir together the oat flour, almond meal, cinnamon, salt and baking powder (if used). Add in mashed banana, vanilla, chocolate chips and maple syrup (if used). Stir until combined. Transfer the dough into a greased ramekin or mug. Bake for 30-40 minutes, depending on desired crunchiness of the exterior.
- If for any reason you do not have baking powder, it may be omitted. However, the bread will not rise. We didn't use baking powder for the bread in the photographs featured here. If you do use it, your bread will be slightly taller.
- Depending on the ripeness of your banana, you may or may not want to add maple syrup. We tested this recipe with a just-ripe banana and found that the extra sweetness was needed, but when we used a brown banana, it was best left out.
- A muffin tin, ramekin, mug or small pyrex bowl may be used (as long as it's oven safe). We used a 3" ramekin.
- For easy clean up, you can mix the ingredients in the ramekin you are baking the bread in. However, note that the bread will stick.
