Soft Sugar Cookies with Chocolate Ganache
and Candy Canes
adapted from Wit + Vinegar
1 cup raw turbinado sugar
1/2 cup + 3 tbsp coconut oil, softened
1 flax egg (1 tbsp flax seed + 3 tbsp water)
1 tsp vanilla extract
1/2 tsp cinnamon
1/2 tsp ground ginger
2 cup flour
2 tsp baking soda
Chocolate ganache, recipe below
3-4 candy canes, crushed
1/2 tsp salt
Preheat oven to 350 degrees Fahrenheit.
In a medium bowl combine sugar, coconut oil, flax egg, and vanilla. In a separate bowl, add cinnamon, ground ginger, flour, and baking soda and mix well. Gradually add dry ingredients to wet and combine to form cookie dough.
Add spoonfuls of cookie dough to a cookie sheet, pressing each cookie down to flatten it out a bit. Bake for 10-12 minutes.
Once cookies are cooled, top each with a spoonful of chocolate ganache, candy canes, and salt.
Easy Chocolate Ganache
6 tbsp unsweetened cocoa powder
4 1/2 tbsp coconut oil, softened
1 1/2 tbsp maple syrup
Mix all ingredients in a medium bowl until fully combined. It may seem like a powdery mess at first, but keep stirring and the mixture will suddenly turn dark brown and come together.
