Inspired, we set out on a mission to develop our own version. A little experimenting led us to this recipe, which proves you don't need any eggs to make mouth-watering, minimalist pancakes. Our version is not only vegan, but also tastes, looks, and feels exactly like a "normal" pancake - but with only three ingredients!
Three Ingredient Vegan Pancakes
1 1/2 cups gluten free oat flour
1 ripe banana
1 cup unsweetened almond milk
1/4-1/2 tsp cinnamon (optional)
Add all ingredients to a high-speed blender and blend until combined. Alternatively, mash the banana, add almond milk and oat flour, and mix well until combined. Let batter sit for 15-20 minutes to thicken.
Using a 1/4 measuring cup, add batter to an oiled skillet over medium heat. Make sure you do not crowd the pan. Depending on the thickness of your batter, you may need to flatten the pancakes a bit after you pour the batter into the pan. Flip pancakes after two or three minutes, or once the edges begin to brown. Cook the second side three more minutes.
Serve immediately with your favorite toppings.
