She surprised me when I came home the other day, showing me a big bowl of vegan radish leaf pesto that she made herself (with some help with the sharp food processor, of course). She told me she wanted me to share it here on Hungry Curious because she is just the cutest thing. She made it vegan specifically for us!
I tasted it. It was amazing. I clearly had to oblige.
If you've made pesto before, you probably know that it's hard to go wrong with measurements. Just add, blend, and taste, and add some more! Quick, easy, and perfect for kids.

KID-FRIENDLY RADISH LEAF PESTO
2 bunches radish leaves, stems removed
1 bunch basil, stems removed
4 small fistfuls shelled sunflower seeds
1 clove garlic
A small puddle of extra virgin olive oil (about 2 tbsp) + more to loosen
1 handful unsalted cashews (omit for nut-free pesto)
1 handful nutritional yeast
10 cranks sea salt
3 cranks ground pepper
Add all ingredients to a food processor and pulse until it is the consistency you desire, adding more olive oil if necessary. The measurements are not exact so that you can adjust them according to your taste, and also so the little one can help out super easily!
Make sure to keep tiny hands away from the food processor blade, but I'm sure you're already way on top of that.
Serve with crackers, veggies, on a sandwich...the possibilities are endless.
